Since the summer holidays have started, the summer weather seems to have packed itself away! Which on the one hand has not been great with an excitable 4 year old and busy 8 month old, but on the other appears to have been great for the plants..especially the blackberries. With our newly found spare time we went for a country walk and were delighted to find a bumper crop of sweet, juicy blackberries. Of course we could not hold back in picking until our fingers were stained a wonderful deep purple and we had a number of overflowing tubs..
Back at home I got thinking as to how I could use these tasty berries. Jam, Crumble, Pie? Nope - Blackberry Cake! What better than a moist slice of Blackberry and Apple Cake with your afternoon tea I thought... So our end of August stall at the Stoke Newington Farmers Market will feature this delicious treat.
We seem to have berries on the mind at the moment, as at our stall last week we were selling Meringues-with the intention that our customers buy these and then some fresh berries from Alison's or Marina's stall and whip up an easy but super tasty dessert.. It worked for our sunday dinner anyway! They really did fly off the shelves, as they say, so we will selling them again at the end of august market.
Right, back to the kitchen...
